    Fabulous podcast. Thank you for all of this valuable information. I want to clarify your oil recommendations when it comes to cooking with oil. Please list the best options for roasting vegetables at 400 degrees. I believe even EVOO from a single estate is not safe at these temps. Is this true? Which type/brand of avocado oil did you mention/recommend? thank you

    • I WOULD QUESTION AVOCADO OIL BEING SAFE AT 400F, REGARDLESS OF WHAT THE CLAIMS MAY BE. I WOULD PREFER TO USE EXTRA VIRGIN COCONUT OIL OR BUTTER AT THAT TEMPERATURE. ORGANIC AVOCADO OIL IS HARD TO FIND AND I THINK THAT IT IS FAIRLY IMPORTANT. BELLA VADO IS THE ONLY AVAILABLE BRAND I AM FAMILIAR WITH. A,FEW COMPANIES OFFER A COMPLETELY MECHANICALLY-PRESSED AVOCADO OIL, SUCH AS LA TOURANGELLE. IT IS A SOLID CHOICE AS WELL. John
